Cheese and Veggie Skewers With Garlic-Dill Dip
These recipes—cheese and veggie skewers, and a garlic-dill dip—are part of the Spooky Snack Board activities developed by Chef Dave Terrazas, owner of Foodie Classroom, for our Charter a Voyage of Learning guide.
Cheese and Veggie Skewers With Garlic-Dill Dip
¾ cup Greek yogurt, plain
1 tbsp dill, minced
1 tsp garlic, minced
1 tsp lemon zest
1 tsp lemon juice
Pinch sea salt
Pinch paprika
Pinch black pepper
~
6 each wooden skewers, 6” long
6 each grape sized, or small cherry tomatoes
12 each black olives, large
6 each cheese sticks (I found a cheddar-mozzarella combo)
In a small mixing bowl, combine the first eight ingredients and stir together well. Transfer dip to a ramekin, cover dip with plastic wrap and transfer to the refrigerator until service time.
Cut each cheese stick into four equal pieces.
To make each skewer, slice a piece of cheese onto the skewer, and then add an olive, a tomato, and another olive, separating each vegetable piece with a piece of cheese.
Serve skewers and dip together.
